The Early Beginnings
Before venturing forth, it is always wise to pay respects to the past. Our story therefore begins in Hong Kong with a lovely woman called Madame Kin Wo Chong. In 1979 she began making Chinese food that was quite exceptional.
Madame Chong believed in tradition and high principles. The Chinese dishes that she lovingly prepared were sold from a very simple wooden cart, that she pushed along the Wanchai Ferry pier. Although her means were modest, her food was cooked to the very highest standards. Her quest was to master the art of great Chinese cooking.
By listening to her customers and learning more about her craft, Madame Chong constantly perfected her recipes, always seeking to attain higher standards, but never at the cost of her traditional principles.
Today Wanchai Ferry continues Madame Chong's work, combining her age-old techniques with delicious multi-layered flavours. And her efforts can now be appreciated by everyone, providing inspiration in the quest for Chinese food mastery.
